Securing Your Share: To ensure you don't miss out on our coveted lamb shares, a deposit of $100 is required for a half share and $150 for a whole share. Once your deposit is received, we reserve your portion of lamb, which continues to graze and thrive on our lush farm until it reaches the ideal age for processing. This reservation guarantees your share and allows us to plan our season to meet customer demand effectively.
Fair and Transparent Pricing: We charge a straightforward price of $10 per pound for the meat, plus a processing fee that varies based on the cuts you select. This fee is directly set by our trusted meat processor, reflecting the labor and customization involved in preparing your lamb. Whether you’re splitting a share with family or enjoying it on your own, our pricing structure ensures that you receive the best value for naturally raised, premium lamb. We work closely with the processor to ensure that your specific meat preferences are met, from classic cuts to specialty requests.
When you purchase a lamb share from us, expect a hanging weight of about 60lbs to yield approximately 45-55lbs of bone-in meat, which may include some ground portions. You’ll receive a cut-list that allows you to choose your preferred cuts. We handle the transportation of the lamb to the processor when it’s time for processing. If necessary, the processor might contact you directly to discuss any specific preferences or questions about the cutting process. A diagram of lamb cuts is provided for your reference.
Our lambs have a live weight ranging from 70lbs to 120lbs, as we allow them to mature at a natural pace. Typically, the hanging weight of a lamb is about 54% of its live weight. The actual yield—meaning the meat you take home—depends on several factors. These include the size of the lamb and your choice of cuts, particularly whether you opt for bone-in or boneless. Opting for more boneless cuts generally means receiving less meat due to the trimming involved.
Before processing, you will fill out a cutlist to specify how you would like your lamb to be prepared. It’s important to remember that certain choices, such as multiple leg roasts from a half share, may not be possible. The butcher might contact you to resolve any discrepancies or to make expert decisions on your behalf.
